Instructions
- Prepare the Potatoes: Peel the potato and grate it using the largest holes of your grater. If you have time, soak the grated potatoes in cold water for at least one hour to release excess starch, then rinse twice and dry thoroughly. If short on time, simply dry the potatoes well and proceed.
- Microwave the Potatoes: Place the grated potatoes on a plate and microwave them for 3 minutes to create a starchy layer that enhances crispiness when fried.
- Prepare Skillet and Heat Ingredients: Use an oven-safe (preferably cast iron) skillet approximately 10-12 inches in diameter. Heat the vegetable oil and diced sausage over medium heat until the oil is hot and the sausage is warmed through, then remove the sausage and set aside.
- Cook the Potato Hash: Add the grated potatoes to the skillet and press them down without stirring or moving for about 5 minutes, allowing the bottom to crisp and turn golden brown. Use a spatula to flip the hash to brown the other side.
- Add Sausage and Prepare for Eggs: Return the sausage to the skillet, then create two indentations in the hash using a spoon to hold the eggs.
- Preheat Oven: While preparing eggs, preheat your oven to 400°F (200°C).
- Add Eggs and Toppings: Crack the eggs into the indentations created in the hash. Sprinkle the diced bell peppers and optional cheddar cheese on top.
- Bake the Skillet: Place the skillet in the preheated oven and bake for 8 to 10 minutes, or until the eggs are cooked to your preferred doneness.
- Season and Serve: Remove from the oven, season the dish with salt and pepper as desired, let rest for 1-2 minutes, then use a spatula to transfer servings to your plate.
