Zucchini Prep
- 2 pounds zucchini (medium sized, about 6-7)
Breading and Coating
- 2 large eggs
- 2 tablespoons water or milk
- Salt and pepper, to taste

- 1/2 cup Parmesan cheese, grated
- 2 cups breadcrumbs
- 1 teaspoon garlic powder
- 2 tablespoons Italian seasoning
Cooking Oil
- Canola or vegetable oil (enough to fill about half an inch in skillet)
Instructions
- Heat the oil: Add canola or vegetable oil to a heavy, deep skillet or Dutch oven to fill about half an inch. Heat the oil over medium-high heat until shimmering and hot enough for frying.
- Prepare the zucchini: Trim the ends off the zucchini and slice them into half-inch thick rounds to ensure even cooking and perfect crispiness.
- Set up coating stations: Whisk the eggs with water (or milk), salt, and pepper in a shallow dish. Place the flour in a second shallow dish. In a third dish, combine the breadcrumbs, Parmesan cheese, garlic powder, and Italian seasoning.
- Coat the zucchini slices: Dip each zucchini slice first in the flour, then into the egg mixture letting excess drip off, and finally coat thoroughly with the breadcrumb mixture. If the egg mixture runs low, whisk in another egg to continue coating.
- Fry the zucchini: Carefully place the coated zucchini slices in the hot oil in batches without overcrowding or letting them touch. Fry each side for 1 to 2 minutes until they develop a golden brown color and crisp texture. Remove and transfer the cooked slices to paper towels or a wire rack to drain excess oil.
- Finish and serve: Sprinkle the fried zucchini with a little salt immediately while still hot and serve them right away for the best crispness and flavor.

- Use fresh, firm zucchini for the best texture.
- Make sure the oil is hot enough before frying to prevent soggy zucchini.
- Drain fried zucchini on a wire rack instead of paper towels if you want them extra crispy.
