Instructions
- Blanch Broccoli: Bring a pot of water to a boil and add the broccoli florets. Blanch them for 2 minutes or just until cooked but still vibrant green. Drain them thoroughly and chop into small, rice-sized pieces.
- Mix Batter: In a large bowl, whisk the eggs until smooth. Add shredded cheddar cheese, parmesan cheese, minced garlic, flour, Cajun seasoning, and the chopped broccoli. Stir everything together until fully combined into a thick batter.
- Heat Pan: Place a non-stick pan over medium-high heat and add 1 tablespoon of oil. Allow the oil to heat up before cooking the fritters.
- Form and Cook Fritters: Scoop about 1/4 cup of the batter and drop it into the hot pan. Gently flatten each scoop into about 1/2-inch thick patties using a spoon. Cook each fritter for 2 to 3 minutes on each side, or until they turn a golden brown and become crisp.
- Serve: Once cooked, remove the fritters from the pan and place on paper towels to drain any excess oil. Serve warm with your choice of dipping sauces such as sour cream, Greek yogurt, or Sriracha mayo for added flavor.
