This Crispy Baked Coconut Shrimp recipe features large shrimp coated in a crunchy blend of panko breadcrumbs and unsweetened coconut flakes. Baked to golden perfection, these shrimp are flavorful and easy to make, perfect as an appetizer or a delightful main dish.

  • Total Time: 20 minutes
  • Yield: 5 servings

Ingredients

Shrimp and Coating

  • 1 pound large shrimp (about 25), peeled (tails on or off)
  • 1 cup flaked unsweetened coconut
  • 1/2 cup panko breadcrumbs
  • 1/2 cup all-purpose flour

Seasonings and Others

  • 2 large eggs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika (optional)
  • Salt (to taste)
  • Pepper (to taste)
  • Oil for greasing the baking sheet (such as vegetable or canola oil)
  • Nonstick cooking spray or additional oil for drizzling

Instructions

  1. Preheat and Prepare Baking Sheet: Preheat your oven to 425°F (220°C). Lightly grease a cookie sheet or baking tray with oil to prevent sticking, and set it aside for later.
  2. Prepare Egg and Coating Mixtures: In a small bowl, beat the two large eggs and set aside. In another bowl, mix together the panko breadcrumbs and flaked unsweetened coconut. In a third bowl, combine the all-purpose flour, garlic powder, paprika (if using), salt, and pepper.
  3. Coat the Shrimp: Working in small batches, dip each shrimp first into the flour and spice mixture, coating it evenly. Next, dip the shrimp into the beaten egg, allowing any excess to drip off. Then press the shrimp into the coconut and breadcrumb mixture until well coated. Repeat with all the shrimp.
  4. Arrange on Baking Sheet and Bake: Place the coated shrimp in a single layer on the prepared baking sheet. Lightly spray the shrimp with nonstick cooking spray or drizzle a little oil over them to help them crisp up. Bake in the preheated oven for about 10 minutes, or until the shrimp are golden brown on the outside and opaque in the center.

Notes

  • You can keep the shrimp tails on for easier handling and added presentation.
  • Ensure the shrimp are dried well before coating for better adhesion of the batter.
  • If you prefer extra crispy shrimp, you can broil them for an additional 1-2 minutes after baking, watching carefully to avoid burning.
  • Serve with a dipping sauce such as sweet chili sauce, mango salsa, or a tangy aioli.
  • Adjust seasoning in the flour mixture to suit your taste preferences.
