A quick and creamy shrimp penne pasta featuring succulent shrimp, fresh tomatoes, garlic, and herbs. This light yet flavorful dish is perfect for a satisfying lunch or dinner and can be prepared in under 30 minutes, making it an ideal choice for a delicious homemade meal any day of the week.

  • Total Time: 25 minutes
  • Yield: 4 servings

Ingredients

Pasta

  • 6 ounces penne (160 g)

Shrimp

  • 10 ounces shrimp, peeled (300 g)

Vegetables and Herbs

  • 1 garlic clove, minced
  • 2 cups fresh tomatoes, chopped (or canned peeled tomatoes as an alternative, 400 g)
  • Fresh basil, chopped (about 2 tablespoons)
  • Fresh parsley, chopped (about 2 tablespoons)

Dairy and Cheese

  • 1/2 cup cream (120 ml)
  • 1/3 cup Parmesan cheese, grated (30 g)

Others

  • Salt, to taste
  • Extra virgin olive oil (about 2 tablespoons)

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add the penne pasta and cook until al dente, usually about 9-11 minutes. Once cooked, drain the pasta and set aside.
  2. Start the base: In a large skillet, heat extra virgin olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute, being careful not to burn it.
  3. Cook the shrimp: Add the peeled shrimp to the skillet and sauté for about 3 minutes until they turn pink and opaque, stirring occasionally to cook evenly.
  4. Add tomatoes: Pour in the chopped fresh tomatoes (or canned peeled tomatoes if using) and increase the heat to high. Cook briefly for 2-3 minutes to allow the tomatoes to soften and release their juices.
  5. Add cream: Lower the heat to medium and stir in the cream. Let the mixture simmer gently for 2-3 minutes until the sauce slightly thickens and all ingredients come together.
  6. Combine everything: Add the cooked penne pasta to the skillet along with the grated Parmesan cheese and chopped fresh basil and parsley. Toss everything well to combine and coat the pasta evenly with the creamy sauce.
  7. Finish and serve: Taste the dish and adjust salt if needed. Serve immediately while hot, garnished with extra herbs or cheese if desired.

Notes

  • For a lighter version, use half-and-half or milk instead of cream.
  • Can substitute shrimp with chicken or scallops if preferred.
  • Fresh tomatoes add brightness, but canned peeled tomatoes are a convenient alternative.
  • Use gluten-free pasta to make this dish gluten-free.
  • Ensure shrimp is fully cooked but not overcooked to keep it tender.
