  • ¼ cup lime juice (about 2 to 3 limes)

Instructions

  1. Combine ingredients: In a liquid measuring cup or small bowl, add the peanut butter, tamari or soy sauce, maple syrup or honey, minced garlic, and red pepper flakes if using. Use a small whisk or fork to stir these ingredients together until well blended.
  2. Whisk in lime juice: Gradually whisk in about half of the lime juice until the mixture becomes creamy. Then, add the remaining lime juice and continue whisking until the dressing is fully blended and smooth.
  3. Adjust sweetness and serve: Taste the dressing and if it seems too tart, add an additional teaspoon or so of maple syrup to balance the flavors. Serve the dressing over your favorite dishes or store leftovers in the refrigerator for up to one week.
