Ingredients
Pasta
- 8 oz. uncooked short pasta (fusilli, bowtie, or penne)
Mushroom Sauce
- 3 Tablespoons butter
- 16 oz. mushrooms, sliced
- 2 teaspoons minced garlic
- 3/4 cup beef, chicken, or vegetable stock
- 1 Tablespoon Dijon mustard
- 2 teaspoons Worcestershire sauce
- 3/4 cup heavy cream
- 2 teaspoons fresh thyme leaves

- Grated Parmesan cheese
Instructions
- Boil the Pasta: Bring a large pot of salted water to a rolling boil over high heat to prepare for cooking the pasta.
- Cook Mushrooms: Heat butter in a large skillet over medium-high heat. Once melted, add sliced mushrooms and cook, stirring occasionally, for about 3 minutes until they soften slightly. Add the minced garlic and cook for another 2 minutes to deepen the flavors.
- Make the Sauce: Stir in the stock, Dijon mustard, Worcestershire sauce, and heavy cream. Reduce heat to medium-low and simmer the sauce, stirring occasionally, for 8 to 10 minutes until it thickens slightly. Stir in fresh thyme leaves to finish the sauce.
- Prepare Pasta: While the sauce is simmering, add the pasta to the boiling water and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining the pasta.
- Combine Pasta and Sauce: Add the drained pasta to the skillet with the mushroom sauce. Pour in 1/4 cup of the reserved pasta water and toss gently to coat the pasta evenly. Add more pasta water as needed to achieve your preferred sauce consistency.
- Season and Serve: Taste the pasta and season with salt and freshly ground black pepper to your preference. Serve immediately, topped with freshly grated Parmesan cheese and extra thyme if desired.

- You can use any type of short pasta such as fusilli, bowtie, or penne for this recipe.
- Choose your preferred stock—beef, chicken, or vegetable—to add more depth to the sauce.
- For a vegetarian version, use vegetable stock and omit Worcestershire sauce or use a vegetarian alternative.
- Reserve pasta water to help thin out the sauce and help it coat the pasta evenly.
