Ingredients

Pasta and Sauce

  • 300g pasta of choice (e.g., castellane)
  • 2 tbsp olive oil
  • 250g brown mushrooms, sliced
  • 2 shallots, finely minced
  • 2 cloves garlic, minced
  • 1 tbsp butter
  • 2 tbsp miso paste
  • 175ml cream
  • 50g parmesan, shredded (about 1/2 cup)
  • 2 stalks parsley, chopped
  • Black pepper, to taste
  • Pasta water, reserved (about 1/2 cup)

  • Grated parmesan cheese
  • Additional chopped parsley
  • Chili oil

Instructions

  1. Cook Pasta: Bring a large pot of lightly salted water to a boil. Add 300g of pasta and cook according to package instructions until al dente. Before draining, reserve about 1/2 cup of the pasta cooking water, then strain the pasta and set aside.
  2. Sauté Mushrooms and Aromatics: In a large pan over medium heat, warm 2 tablespoons of olive oil. Add the sliced 250g brown mushrooms and fry until they turn golden brown and release their moisture. Add the finely minced shallots and garlic, and sauté until translucent and fragrant. Push the mixture to one side of the pan.
  3. Make the Miso Cream Sauce: On the empty side of the pan, add 1 tablespoon of butter, 2 tablespoons of miso paste, and 175ml of cream. Stir continuously until the miso dissolves completely and the sauce is smooth and creamy.
  4. Combine Pasta and Sauce: Add the drained pasta to the pan and toss to combine with the mushroom mixture and sauce. Drizzle in the reserved pasta water gradually to loosen the sauce to your desired consistency. Stir in the shredded 50g parmesan, chopped parsley, and black pepper to taste.
  5. Serve and Garnish: Divide the creamy miso mushroom pasta between serving plates. Garnish with extra grated parmesan, additional chopped parsley, and a drizzle of chili oil if desired for a spicy finish. Serve immediately while warm.
