Instructions
- Sauté Aromatics: In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the diced onions and sauté until they become soft and translucent, about 3-4 minutes. Then, add the minced garlic and cook for an additional minute until fragrant.
- Add Taco Seasoning: Sprinkle in 2 tablespoons of taco seasoning and stir well to coat the onions and garlic evenly, enhancing the flavor base of the soup.
- Combine Soup Ingredients and Simmer: Pour in the chicken broth, followed by the fire-roasted tomatoes and green chilies, black beans, and corn kernels. Increase the heat to bring the mixture to a boil. Once boiling, reduce the heat and let the soup gently simmer for 8-10 minutes to meld the flavors.
- Melt Cream Cheese: Gradually add the softened cream cheese in small pieces to the simmering soup. Stir slowly and patiently until the cream cheese is fully melted and incorporated, creating a creamy texture without separation.
- Add Chicken and Warm Through: Stir the shredded cooked chicken into the soup and continue to simmer for an additional 5 minutes to warm the chicken through and let the flavors combine.
