This creamy chicken noodle casserole is a comforting, hearty dish that combines tender shredded chicken, wide egg noodles, vibrant peas and carrots, and a rich, cheesy sauce made from cream soups and sour cream. It’s topped with a crispy crushed Ritz cracker crust and melted Colby Jack cheese, making it perfect for an easy family dinner or potluck meal.

  • Total Time: 50 minutes
  • Yield: 6-8 servings

Ingredients

Main Ingredients

  • 3 cups cooked chicken, shredded
  • 12 oz wide egg noodles
  • 16 oz frozen peas and carrots (about 2 cups)
  • 10.5 oz cream of chicken soup
  • 10.5 oz cream of mushroom soup
  • 8 oz sour cream
  • 1 cup milk
  • 1 teaspoon garlic salt
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cups shredded Colby Jack cheese

Garnish (Optional)

  • Chopped fresh parsley
  • ½ cup crushed Ritz crackers for crunch

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
  2. Cook Noodles: In a large pot of salted boiling water, cook the wide egg noodles according to package instructions until al dente. Drain and set aside.
  3. Prepare Casserole Mixture: In a large mixing bowl, combine the cream of chicken soup, cream of mushroom soup, sour cream, and milk. Stir in garlic salt, onion powder, salt, and black pepper until well blended.
  4. Combine Ingredients: Add the cooked shredded chicken, frozen peas and carrots (no need to thaw), cooked noodles, and 1 cup of the shredded Colby Jack cheese to the soup mixture. Gently fold everything together until evenly mixed.
  5. Assemble in Baking Dish: Transfer the mixture into a greased 9×13 inch baking dish, spreading it out evenly.
  6. Add Topping: Sprinkle the remaining 1 cup of shredded Colby Jack cheese evenly on top. Then, if using, sprinkle the crushed Ritz crackers over the cheese layer for added crunch.
  7. Bake: Place the casserole in the preheated oven and bake for 30-35 minutes, or until the top is golden and bubbly.
  8. Garnish and Serve: Remove from the oven, let cool slightly, then garnish with chopped fresh parsley if desired. Serve warm.

Notes

  • You can use rotisserie chicken or leftover cooked chicken to save time.
  • Wide egg noodles are preferred for texture; you can substitute with other pasta shapes if needed.
  • The Ritz cracker topping is optional but adds a nice crunchy texture contrast.
  • If frozen peas and carrots are not available, you can use fresh or canned vegetables but adjust cooking time accordingly.
  • For a lighter version, substitute sour cream with Greek yogurt and use reduced-fat soups and cheese.
