Ingredients
Protein and Vegetables
- 1 lb chicken breast, cubed
- 1/2 small yellow onion, chopped
- 1 tsp garlic, minced
- 2 15.5 oz. cans cannellini beans, drained
- 1/2 cup corn
Liquids
- 2 cups chicken broth
Oils and Dairy
- 1 Tbsp avocado oil (or olive oil)
- 3/4 cup plain yogurt
- 1 cup shredded cheese (optional)
Spices and Herbs
- 2 tsp cumin
- 1/2 tsp coriander
- 1 tsp paprika
- 1/2 tsp oregano
- Salt and pepper, to taste
- Cilantro, for topping (optional)
Instructions
- Cook onion and garlic: Heat the avocado oil in a dutch oven over medium heat. Add the chopped onion and minced garlic, cooking until soft and fragrant, about 3-4 minutes.
- Cook chicken: Add the cubed chicken breast to the pot and cook, stirring occasionally, for about 10 minutes or until the chicken pieces are nicely browned on the outside.
- Add beans and broth: Pour in the drained cannellini beans and chicken broth. Stir and bring the mixture to a gentle simmer.
- Add corn and seasoning: Stir in the corn along with cumin, coriander, paprika, oregano, and season with salt and pepper to your taste.
- Simmer: Let the chili simmer gently for about 10 minutes to allow the flavors to meld and ensure the chicken is cooked through.
- Whisk yogurt: In a small bowl, whisk the plain yogurt with approximately 1/4 cup of warm water until it reaches a smooth, pourable consistency.
- Add yogurt and cheese: Stir the yogurt mixture into the chili to add creaminess. If desired, sprinkle in shredded cheese and stir until melted and well combined.
- Serve: Serve the creamy chicken chili in bowls, topped with fresh cilantro if using. Enjoy warm for a delicious and satisfying meal.
Notes
- For a spicier version, add a pinch of cayenne pepper or chopped jalapeño.
- If you prefer a thicker chili, reduce the amount of chicken broth slightly.
- Greek yogurt can be used for a thicker, tangier creaminess.
- This chili can be prepared in advance and reheated; flavors will develop more over time.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
