Ingredients
Potatoes
- 1 5lb bag yellow potatoes, peeled (or just washed) and chopped
Liquids & Fats
- 1/3 cup unsweetened almond milk
- 1/3 cup ghee
- 3 tbsp extra virgin olive oil
Seasonings
- 1/2 tbsp minced garlic
- 1 tsp sea salt
- Ground pepper to taste
Instructions
- Prepare the Potatoes: Add the peeled and chopped yellow potatoes to a large pot and cover them completely with cold water. Place the pot over medium-high heat and bring the water to a boil. Cook the potatoes for about 10-15 minutes, or until they are fork- or knife-tender, meaning they can be easily pierced without resistance.
- Drain the Potatoes: Carefully strain the potatoes using a colander to remove all the cooking water, then return them to the pot while still warm. This helps to retain their heat and absorb the added ingredients better.
- Add Fats and Seasonings: To the hot potatoes in the pot, add the unsweetened almond milk, ghee, extra virgin olive oil, minced garlic, sea salt, and ground pepper. This combination will create a creamy and flavorful base for the mashed potatoes.
- Mash the Potatoes: Use a potato masher, electric beater, or an immersion blender to mash the potatoes gently. Be careful not to overmix or overstir, as this can cause the potatoes to become gummy and sticky. Mash until the desired creamy and smooth consistency is reached.
- Adjust and Serve: Taste the mashed potatoes and adjust the seasonings as needed, adding additional salt, pepper, or garlic for your preference. Serve immediately as a delicious side dish to complement your meal.
Notes
- Use yellow potatoes for a naturally creamy texture; russets or Yukon gold can be used as alternatives.
- Do not overmix the potatoes to avoid a gummy texture.
- Ghee and olive oil combined give a rich buttery flavor without using butter.
- Almond milk keeps the mashed potatoes dairy-free but still creamy.
- For a fluffier mash, warm the almond milk before adding.
- Adjust garlic and seasoning to taste, or add fresh herbs like chives or parsley for variation.
