  • 1 small (or 1/2 large) ripe avocado
  • 1/2 cup fresh parsley or cilantro
  • 1/3 cup sour cream (or plain full-fat Greek yogurt)
  • 1/4 cup extra-virgin olive oil
  • 2 Tbsp. fresh lemon juice
  • 1/2 tsp. garlic powder (or 1 small fresh garlic clove)
  • 1/2 tsp. sea salt (or 1/4 tsp. table salt)
  • 1/4 tsp. cracked black pepper

Instructions

  1. Prepare Ingredients: Gather all ingredients: ripe avocado, parsley or cilantro, sour cream or Greek yogurt, extra-virgin olive oil, fresh lemon juice, garlic powder or fresh garlic, salt, and cracked black pepper.
  2. Combine in Blender: Place the avocado, fresh parsley or cilantro, sour cream or yogurt, olive oil, lemon juice, garlic powder, salt, and black pepper into a small blender or food processor.
  3. Add Water: Add 2 tablespoons of water to the blender to help achieve a smooth consistency when blending.
  4. Blend Sauce: Blend the mixture until mostly smooth with some green specks remaining. Stop blending occasionally to scrape down the sides of the blender for an even mix.
  5. Adjust Seasoning: Taste the sauce and adjust seasoning as needed by adding more salt, pepper, or lemon juice to your preference.
  6. Serve: Transfer the finished avocado sauce to a bowl and serve immediately. Use it as a topping or dip for tacos, quesadillas, burrito bowls, burgers, or roasted vegetables.
