Ingredients
Base Sauce
- 2 tablespoons butter
- 1/3 cup all-purpose (white) flour

- 1¼ cups nonfat milk
Tuna Mixture
- 1 (6.4-ounce) pouch albacore white tuna in water
- ¼ cup frozen peas, thawed (optional)

Instructions
- Prepare Ingredients: Measure all ingredients and have them ready by the stove, as the cooking process moves quickly once started.
- Melt Butter and Cook Flour: In a medium saucepan over low heat, melt the butter. Sprinkle in the flour and kosher salt, stirring frequently for about 3 minutes to cook out the raw flour taste. The flour will first clump together then begin separating into smaller crumbs.
- Add Milk Gradually: Add a few tablespoons of nonfat milk to the roux, whisking vigorously until smooth. Continue adding the rest of the milk in two more additions, whisking each time until the mixture is smooth without lumps.
- Thicken Sauce: Increase heat to high and whisk continuously as the sauce begins to thicken and approach a boil, typically within 1½ to 2 minutes. Watch carefully as it thickens quickly to avoid lumps.
- Incorporate Tuna and Peas: When the sauce reaches a slightly thinner consistency than desired, reduce heat to low and stir in the tuna and thawed peas if using. Cook an additional 30 to 60 seconds until heated through. Adjust thickness by adding milk if necessary.
- Serve: Spoon the creamed tuna mixture immediately over toasted whole-grain bread. Garnish with sliced tomato, hard-boiled eggs, or minced fresh parsley if desired for added flavor and presentation.
Notes
- Using a pouch of tuna ensures a tender texture. Canned tuna can be used but may be firmer.
- Thawed frozen peas add color and sweetness but can be omitted.
- Whisk continuously when thickening the sauce to prevent lumps.
- If sauce thickens too much, thin it with additional milk 1-2 tablespoons at a time.
