Tart Shells
- 8 1/2 tablespoons unsalted butter, cut into small cubes
- 1 1/2 cups all-purpose flour
- 1/2 cup powdered (icing) sugar
- 1 egg yolk
Cream Cheese Filling
- 1 cup cream cheese, softened at room temperature
- 3 tablespoons powdered (icing) sugar
- 2/3 cup heavy whipping cream
- 1 teaspoon cornstarch
Egg Wash
- 1/2 tablespoon milk (or water)
- 1 egg yolk
Instructions
- Prepare Tart Shells: Cut the butter into small cubes. In a mixing bowl, combine the flour, powdered sugar, and butter cubes. Use an electric whisk to beat the mixture until it resembles crumbs. Add the egg yolk and whisk again, then knead the mixture by hand until a smooth dough forms.
- Shape and Prebake Tart Shells: Preheat the oven to 410°F (210°C). Take small portions of the dough and press each evenly into a 2.6-inch tart mold. Trim off excess dough from the edges with a knife and prick the bottoms of each tart shell with a fork to prevent puffing. Repeat until all nine tart shells are formed. Bake them for 15 minutes, then allow them to cool completely in the molds before removing.
- Make Cream Cheese Filling: Soften the cream cheese at room temperature, then mix it with powdered sugar in a bowl. Using a spatula, stir and fold the mixture until smooth. Gradually add the heavy whipping cream in three portions, mixing thoroughly after each addition until fully combined. Stir in the cornstarch until the filling is smooth and well incorporated.
- Fill and Freeze Tarts: Spoon the cream cheese filling into a piping bag and pipe it into each prebaked tart shell evenly. Place the filled tarts in the freezer and let them freeze for at least 4 hours or until the filling is firm.
- Apply Egg Wash and Bake: Preheat the oven again to 410°F (210°C). In a small bowl, whisk together the egg yolk and milk (or water) to make the egg wash. Brush the frozen cheese tarts lightly with the egg wash to achieve a glossy, golden finish. Bake the tarts for 15 minutes until the tart shells and tops are golden and cooked through.
