Instructions
- Prepare Ingredients: On a cutting board or flat surface, roughly chop the dried cranberries and unsalted pistachios into small pieces. Zest about half of an orange to get approximately 1 teaspoon of fresh orange zest.
- Mix the Coating: In a large bowl, combine the chopped pistachios, cranberries, orange zest, and honey. Stir thoroughly until all the ingredients are well incorporated and sticky, which will help the coating adhere to the goat cheese.
- Coat the Cheese Log: Place the goat cheese log on a cutting board or a sheet pan. Roll the cheese log in the cranberry-pistachio mixture until it is fully covered on all sides, pressing gently to ensure the coating sticks evenly.
- Serve: Arrange the coated goat cheese log on a serving platter. Serve it alongside crackers or crostini. Optionally, drizzle additional honey on top for added sweetness before serving.
