Ingredients
Main Ingredients
- 1 loaf French baguette, sliced diagonally into 1-inch thick rounds
- 1 stick butter
- ½ cup brown sugar
- 2 Tablespoons light corn syrup
- 1 cup fresh cranberries
- 6 eggs
- 1 cup milk (whole milk preferred, 2% acceptable)
- ½ cup Dunkin Donuts Extra Extra coffee creamer
- 1 Tablespoon vanilla extract
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
Optional for Serving
- Maple syrup
- Powdered sugar
Instructions
- Prepare Butter Glaze: Melt the butter, brown sugar, and light corn syrup together in a small saucepan over low heat. Bring the mixture to a boil and let it boil for 1 minute, stirring occasionally and being careful not to burn the mixture.
- Prepare Baking Dish: Spray a 9 x 13-inch baking dish with cooking spray to prevent sticking.
- Layer Glaze and Cranberries: Pour the melted butter mixture into the bottom of the baking dish, then sprinkle half of the fresh cranberries evenly over the glaze.
- Arrange Bread: Layer the sliced baguette rounds evenly on top of the butter and cranberry mixture in the baking dish.
- Make Custard: In a medium bowl or large measuring cup, whisk together the eggs, milk, coffee creamer, vanilla extract, ground cinnamon, and ground nutmeg until well combined.
- Soak Bread: Pour the custard mixture evenly over the bread slices. Sprinkle the remaining cranberries evenly on top.
- Refrigerate Overnight: Cover the baking dish tightly with plastic wrap and place it in the refrigerator to soak and chill overnight. This allows the bread to absorb the custard fully.
- Bake the Casserole: The next morning, remove the plastic wrap and bake the casserole in a preheated oven at 350°F (180°C) for 30 minutes, or until the custard is set and the top is lightly golden.
- Serve: Dust the baked French toast casserole with powdered sugar and serve warm with maple syrup, if desired.
Notes
- Using whole milk is best to ensure a rich custard texture; avoid skim milk due to low fat content.
- Light corn syrup helps create a sticky, caramelized glaze at the bottom of the casserole.
- Fresh cranberries add a tart contrast; frozen can be substituted but fresh is preferred for best texture.
- The soaking step overnight is crucial for best flavor and texture.
- If you prefer, you can double the recipe for a larger crowd using a bigger baking dish.
- For a dairy-free option, substitute milk and creamer with almond or oat milk, but the texture of custard may differ slightly.
