Pastry
- 350 g ready-rolled puff pastry
- 1 egg or egg yolk (beaten, optional for glaze)

- 2 tbsp Greek yoghurt
- 5 g fresh basil leaves

Instructions
- Preheat the Oven: Set your oven to 180°C Fan (160°C conventional) to prepare for baking the tart.
- Prepare the Pastry: Roll out the puff pastry to about 35 x 23 cm or unroll the ready-rolled pastry onto a baking sheet. Score a border approximately 1.5 cm from the edge without cutting through. If desired, brush the edges with beaten egg to encourage browning.
- Blind Bake the Pastry: Place the pastry in the preheated oven and bake for 20 minutes until the pastry puffs up, crisps, and turns light golden brown.
- Prepare the Courgette Ribbons: While the pastry bakes, use a potato peeler or a spiralizer with a ribbon attachment to slice the courgettes into thin ribbons, avoiding the soft seeded core to prevent sogginess.
- Make the Whipped Feta: Combine Greek yoghurt, crumbled feta, smoked paprika, fresh basil, olive oil, and optional garlic in a food processor. Blend until smooth and creamy.
- Assemble the Tart: Remove the baked pastry from the oven. Carefully spread red onion chutney over the base, avoiding the scored border to keep it raised.
- Add Toppings: Arrange the courgette ribbons on top of the chutney, then spoon dollops of the whipped feta mixture across the tart. Season to taste with salt and pepper.
- Bake the Tart: Return the fully assembled tart to the oven for approximately 14-15 minutes, allowing flavors to meld and courgettes to soften slightly.
- Serve: Remove from oven and serve warm or at room temperature alongside your favorite salad for a light and flavorful meal.
Notes
- Using courgette ribbons rather than diced courgettes helps prevent the pastry from becoming soggy.
- The beaten egg wash on the pastry edge is optional but creates a beautiful golden finish.
- The pastry can be baked on a non-stick baking sheet or parchment paper to avoid sticking.
- For a stronger garlic flavor, leave the garlic clove in the whipped feta; omit if preferred.
