A comforting and classic Cottage Pie with a cheesy mashed potato topping, layered over a flavorful ground beef and vegetable mixture, baked to golden perfection.

  • Total Time: 1 hour
  • Yield: 8 servings

Ingredients

Mashed Potato Topping

  • 4 large russet potatoes (cut into 1″ chunks)
  • 3 tablespoons butter
  • 1/4 cup half and half
  • 1/4 cup sour cream
  • 1 teaspoon garlic powder
  • 1 tablespoon fresh parsley (or 1 teaspoon dried parsley)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cheddar cheese (shredded)

Meat and Vegetable Filling

  • 1 small onion (chopped)
  • 2 minced garlic cloves
  • 2 pounds ground beef (or ground turkey or lamb)
  • 3 tablespoons all-purpose flour
  • 3 tablespoons tomato paste
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried parsley
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup beef broth
  • 2 tablespoons Worcestershire sauce
  • 1/2 cup red wine or grape juice (or 1/4 cup red wine vinegar & 1/4 cup water)
  • 1 ½ cups frozen peas and carrots
  • ½ cup frozen corn
  • 2 bay leaves

Instructions

  1. Preheat the oven: Preheat your oven to 350° F to prepare for baking the cottage pie later on.
  2. Boil potatoes: Peel and dice the russet potatoes into 1-inch chunks. Place them into a large pot of boiling water and cook on high heat for 15-20 minutes or until they become tender when pierced with a fork.
  3. Cook onion and garlic: While the potatoes are boiling, heat olive oil in a large skillet over medium-high heat. Add the chopped onion and sauté until tender. Add the minced garlic and cook for an additional minute until it becomes fragrant.
  4. Prepare mashed potatoes: Drain the cooked potatoes and mash them thoroughly using a potato masher. Mix in the half and half, sour cream, butter, garlic powder, fresh or dried parsley, salt, and black pepper until the mash is smooth and creamy. Set aside for topping the pie later.
  5. Brown the meat: Add the ground beef (or choice of meat) to the skillet with the onions and garlic. Cook, breaking up the meat, until fully browned. Drain any excess fat from the skillet.
  6. Add flour and spices: Sprinkle the all-purpose flour over the cooked meat and stir continuously for about 1 minute until the flour is golden and well incorporated. Stir in tomato paste, dried rosemary, parsley, thyme, paprika, salt, and black pepper to build flavor.
  7. Add liquids and thicken: Pour in the beef broth, Worcestershire sauce, and the red wine or grape juice mixture. Add in the bay leaves. Bring the mixture to a slow boil, allowing it to thicken for 3 to 5 minutes while stirring occasionally.
  8. Simmer with vegetables: Reduce the heat to medium-low, remove the bay leaves, and stir in the frozen peas and carrots along with the frozen corn. Simmer the filling for 5 to 10 minutes until the vegetables are heated through and no longer frozen.
  9. Assemble the pie: Leave the meat mixture in the cast iron skillet or transfer to a baking dish. Spread or pipe the prepared mashed potato mixture evenly over the meat layer to cover the entire surface.
  10. Add cheese topping: Sprinkle the shredded cheddar cheese evenly over the mashed potato layer to add a rich, melty finish.
  11. Bake the pie: Place the assembled pie in the preheated oven and bake for 20 minutes, or until the pie is hot throughout and the edges of the potato topping turn golden brown.

Notes

  • You can swap ground beef with ground turkey or lamb depending on preference.
  • For a richer mashed potato topping, increase the butter or sour cream slightly.
  • If you don’t have red wine, grape juice works as a perfect substitute for sweetness.
  • Make sure to drain excess fat after browning the meat to avoid greasy filling.
  • Use fresh herbs if available for more vibrant flavor, but dried herbs work fine.
  • Leftovers keep well in the fridge for up to 3 days and reheat nicely in the oven or microwave.
