These Cottage Cheese Protein Popsicles are a refreshing and nutritious treat perfect for warm days. Blended with frozen mixed berries, cherries, and creamy cottage cheese, these popsicles offer a delightful balance of protein and natural sweetness. Enhanced with vanilla and a touch of honey or maple syrup, they freeze into creamy, fruity popsicles that are easy to make and perfect for a healthy snack or dessert. Optional freeze-dried strawberries add a crunchy, flavorful coating to the popsicles for an extra special touch.

  • Total Time: 12 hours 10 minutes
  • Yield: 8 popsicles

Ingredients

Main Ingredients

  • 2 1/4 cups frozen mixed berries and frozen cherries (about 1 1/4 cups mixed berries and 1 cup cherries)
  • 1 cup cottage cheese
  • 1/3 cup milk
  • 1 teaspoon vanilla extract
  • 1 1/2 tablespoons honey or maple syrup (optional, to sweeten)

Optional Coating

  • 1 oz freeze-dried strawberries

Instructions

  1. Blend the base ingredients: In a blender, add the frozen mixed berries and cherries first, followed by cottage cheese, honey (if using), milk, and vanilla extract. Blend the mixture until it is completely smooth and creamy.
  2. Pour and freeze: Pour the blended mixture evenly into popsicle molds. Insert popsicle sticks into the center of each mold. Wipe off any excess mixture around the edges to ensure easy removal after freezing. Cover the molds with their lids and place them in the freezer for 12 hours or overnight to freeze solid.
  3. Prepare freeze-dried strawberries: If you choose to use freeze-dried strawberries, place them in a plastic bag and crush them finely using a mallet or your hand to create a powdery texture.
  4. Coat the popsicles: Once the popsicles are fully frozen, carefully remove them from the molds. Spread the crushed freeze-dried strawberries onto a plate or sheet pan. Dip the top of each popsicle into the strawberry powder. If the powder does not stick well, lightly brush the popsicle surface with honey before dipping to help the coating adhere.

Notes

  • Using full-fat cottage cheese will yield creamier popsicles.
  • Adjust sweetness by adding more or less honey or maple syrup to suit your taste.
  • Milk can be substituted with plant-based milk for a dairy-free alternative, though it may alter the texture.
  • Ensure to blend thoroughly for a smooth consistency to make the popsicles easy to eat.
  • Be gentle when removing popsicles from molds to avoid breaking.
  • Freeze-dried strawberries are optional but add a lovely tart crunch as a coating.
  • These popsicles can be stored in the freezer for up to 2 weeks for best quality.
