Bean Mixture
- 2/3 cup refried beans
- 2 tablespoons water (adjust for consistency)

- 4 heaping tablespoons finely shredded cheese (fiesta or Mexican style mix recommended)

Burrito Base
- 2 burrito-sized flour tortillas
Instructions
- Prepare the Refried Beans: Place 2/3 cup of refried beans into a small saucepan and add a couple tablespoons of water to thin out the beans for easier spreading. Stir to combine thoroughly until the consistency is smooth but spreadable.
- Heat the Beans: Put the saucepan over medium heat and warm the bean mixture until it is piping hot. Once heated, turn off the heat and cover with a lid, allowing the beans to stay warm while you prepare the tortillas.
- Warm the Tortillas: Heat a large pan over medium heat and place one flour tortilla in the pan without adding oil or spray. Cook the tortilla on both sides until hot and pliable, then remove and place on a clean surface. Repeat with the second tortilla.
- Assemble the Burritos Quickly: To help the cheese melt, work quickly. Spread about 1/3 cup of the hot refried beans in the center of the warm tortilla. Evenly sprinkle approximately 4 heaping tablespoons of shredded cheese over the beans, add 1 tablespoon of chopped onion, and drizzle 1 to 2 tablespoons of taco sauce on top.
- Fold and Roll: Fold the sides of the tortilla inwards and carefully roll the burrito up from the bottom to enclose the filling securely. Serve immediately for a warm, gooey bite or allow the burrito to rest for a few minutes so the cheese melts more thoroughly.
- Serve: Enjoy your bean burrito with additional taco sauce if desired for extra flavor and spice.
