Ingredients
Meat Mixture
- 1 Pound ground turkey
- ½ red onion, diced (reserve half for topping)
- ¼ Cup jalapenos (canned, sliced, reserve half for topping)
- 1 Package taco seasoning (1 ¼ Ounces)
- 1 Cup Greek yogurt
- 1 Tablespoon ranch seasoning
Casserole Layers
- 2 Bags Doritos (Cool Ranch flavor, 9 ¼ Ounces each)
- 11 Ounces fiesta corn (frozen)
- 1 Can Rotel tomato and green chilies (10 Ounces, drained)
- 3 Cups taco cheese blend (or similar, shredded)
Garnish
- Fresh cilantro, chopped
- Additional diced red onion
- Additional sliced jalapenos
- Shredded lettuce and cabbage (optional, for serving)
- Olive oil or canola oil spray (for greasing)
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C) to prepare for baking the casserole later.
- Cook the Turkey Mixture: Heat a pan over medium-high heat. Once hot, add the ground turkey, half of the diced red onion, and half of the sliced jalapeños. Sprinkle the taco seasoning over the meat and cook for about 10 minutes until the turkey is fully cooked and no longer pink. Drain any excess grease from the pan.
- Mix in Creamy Ingredients: Remove the pan from heat. Stir in the Greek yogurt and ranch seasoning thoroughly to create a creamy, flavorful turkey mixture.
- Prepare Doritos for Layering: Place three-quarters of the Doritos into a Ziploc bag and break into pieces about the size of a quarter. Keep the remaining quarter of the Doritos in a separate bag to crush finely later.
- Grease the Casserole Dish: Lightly spray a 9×13-inch casserole dish with olive or canola oil to prevent sticking.
- First Layer: Spread half of the broken Dorito pieces evenly onto the bottom of the casserole dish. Top this with half of the cooked turkey mixture.
- Add Vegetables and Cheese: Layer half of the frozen fiesta corn, half of the drained Rotel tomatoes with green chilies, and half of the shredded taco cheese on top of the turkey layer.
- Repeat Layers: Repeat the layers with the remaining Doritos, turkey, corn, and tomatoes, building the casserole evenly.
- Top with Crushed Doritos and Cheese: Crush the second bag of reserved Doritos into fine crumbs. Sprinkle these crumbs evenly over the top layer of the casserole. Then add the remaining shredded cheese.
- Bake the Casserole: Place the casserole dish into the preheated oven and bake for 30 minutes, or until the cheese is melted and bubbly and the top is golden.
- Garnish and Serve: Remove from oven and top with the reserved diced red onion and jalapeños. Garnish with fresh cilantro. Serve with optional shredded lettuce and cabbage for added crunch and freshness.
Notes
- You can substitute ground turkey with ground chicken or beef if preferred.
- For extra heat, add more jalapeños or a dash of hot sauce to the turkey mixture.
- If Greek yogurt is unavailable, sour cream can be used as a substitute.
- To make the casserole gluten-free, ensure the taco seasoning and Doritos are labeled gluten-free.
- Leftovers can be stored covered in the refrigerator for up to 3 days and reheated in the oven.
