Ingredients
Meat and Vegetables
- 1 Pound ground turkey
- 1 red onion, diced (divided)
- ½ Cup canned sliced jalapenos (divided)
- 11 Ounces frozen fiesta corn
- 1 Can Rotel tomato and green chilies, 10 Ounces, drained
- Fresh cilantro, for garnish
Seasonings and Dairy
- 1 Package taco seasoning, 1 ¼ Ounces
- 1 Cup Greek yogurt
- 1 Tablespoon ranch seasoning
- 3 Cups taco cheese (or similar), shredded
Other
- 2 Bags Cool Ranch Doritos, 9 ¼ Ounces each
- Olive oil or canola oil spray (for greasing the casserole dish)
Instructions
- Preheat the oven: Preheat your oven to 375°F to prepare for baking the casserole.
- Cook the turkey mixture: Heat a pan over medium-high heat. Add ground turkey, half of the diced red onion, and half of the sliced jalapenos. Sprinkle taco seasoning over the mixture and cook for about 10 minutes until the turkey is fully cooked. Drain excess grease from the pan.
- Mix in dairy and seasonings: Remove the pan from heat, then stir in Greek yogurt and ranch seasoning until everything is thoroughly combined, creating a creamy seasoned turkey mixture.
- Prepare the Doritos: Place three-quarters of the Doritos into a large Ziploc bag and gently break into pieces roughly the size of a quarter. Reserve the remaining quarter of the Doritos in a separate bag to crush finely later for the topping.
- Grease and layer casserole dish: Lightly spray a 9×13-inch casserole dish with olive or canola oil. Spread half of the broken Dorito pieces evenly on the bottom of the dish as the first layer.
- Add layers: Spread half of the cooked turkey mixture over the Doritos, then add half of the frozen fiesta corn, half of the drained Rotel tomatoes with green chilies, and half of the shredded taco cheese.
- Repeat layering: Add the remaining broken Doritos, cooked turkey mixture, corn, and tomatoes in the same order as the first layer.
- Top the casserole: Crush the remaining Doritos into fine crumbs and sprinkle evenly over the top. Then add the remaining shredded cheese over the crushed chips.
- Bake the casserole: Place the casserole dish in the preheated oven and bake for 30 minutes, or until the cheese is melted and bubbly, and the top is slightly crispy.
- Garnish and serve: Once baked, top the casserole with the remaining diced red onion and sliced jalapenos. Garnish with fresh cilantro and serve alongside shredded lettuce and cabbage for a refreshing crunch.
Notes
- Use Greek yogurt as a healthier alternative to sour cream for a creamy texture.
- If you prefer less heat, adjust the amount of jalapenos or omit them entirely.
- For a gluten-free version, verify that the taco seasoning and Doritos are certified gluten-free.
- Let the casserole rest for 5 minutes after baking to set before serving.
- Additional toppings like sliced avocado, salsa, or sour cream can be added when serving for extra flavor.
