Ingredients
Main Ingredients
- 4 large chicken breasts (about 2 1/2 pounds)
- 2 Tb taco seasoning
- 2 C salsa
- 1 Tb honey
- 1/3 C fresh cilantro, chopped
- 1 lime, juiced
To Serve
- Tortillas
- Tomatoes, diced
- Sour cream
- Lettuce, shredded
- Avocado, sliced
- Cheese, shredded
Instructions
- Prepare the Chicken: Place the 4 large chicken breasts at the bottom of the crock pot, ensuring they lie flat and evenly.
- Mix the Sauce: In a separate bowl, combine the taco seasoning, salsa, honey, chopped cilantro, and the juice of 1 lime. Stir well until all ingredients are fully incorporated to create a vibrant sauce.
- Add Sauce to Chicken: Pour the sauce mixture evenly over the chicken breasts in the crock pot, making sure each piece is well coated.
- Cook: Cover the crock pot with its lid and cook on low heat for 6 hours, or on high heat for 3-4 hours, until the chicken is tender and fully cooked through.
- Shred the Chicken: Once cooked, remove the chicken breasts and shred them using two forks. Return the shredded chicken to the crock pot and mix with the remaining sauce to absorb the flavors.
- Serve: Serve the cilantro lime chicken warm with tortillas and your choice of toppings such as diced tomatoes, sour cream, shredded lettuce, avocado slices, and shredded cheese for a customizable, tasty meal.
