Ingredients
Dry Ingredients
- 2 cups all purpose flour
- 2 tsp ground cinnamon
- 1 tsp baking powder
- ½ tsp salt
Wet Ingredients
- 1½ cups light brown sugar (packed)
- 1 cup unsalted butter
- 2 large eggs
- 1 tsp vanilla extract
Topping
- 1 tsp ground cinnamon
- ¼ cup granulated sugar
- 2 tbsp unsalted butter (melted)
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350 degrees F. Line a 9×9 inch baking pan with parchment paper and set it aside for easy removal of the baked bars.
- Mix Dry Ingredients: In a small bowl, combine the all purpose flour, 2 teaspoons of ground cinnamon, baking powder, and salt. This mixture will provide the cinnamon flavor and leavening to your batter.
- Combine Butter and Brown Sugar: In a medium-sized mixing bowl, blend together the unsalted butter and packed light brown sugar until the mixture is smooth and well combined, creating a rich, sweet base for the bars.
- Add Eggs and Vanilla: Beat in the eggs one at a time followed by the vanilla extract. Stir these ingredients thoroughly to create a uniform batter.
- Incorporate Dry Ingredients: Gradually add the flour mixture into the wet ingredients and stir until just combined. Avoid overmixing to keep the bars tender.
- Spread Batter: Pour the batter into the lined baking pan and spread it evenly to ensure uniform thickness.
- Bake: Place the pan in the preheated oven and bake for 30 minutes. Bake until the edges are set and the center is slightly firm to the touch.
- Cool and Add Topping: Remove the pan from the oven and allow it to cool for 5 minutes. Meanwhile, mix the 1 teaspoon ground cinnamon with the ¼ cup granulated sugar in a small bowl. Brush the top of the warm bars with melted butter, then sprinkle the cinnamon-sugar mixture evenly over the top for that signature churro flavor.
Notes
- Use parchment paper in the pan for easy removal and clean-up.
- Ensure butter is melted but not hot when mixing with sugar to avoid scrambling the eggs.
- For extra crispiness, you can broil the bars for 1-2 minutes after topping but watch carefully to avoid burning.
- Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate up to a week.
- These bars can be served warm or at room temperature with a cup of coffee or tea.
