Ingredients
Pancake Batter
- 1 1/2 cups self raising flour
- 1 teaspoon baking powder (heaped)
- 2 tablespoons sugar
- 1/2 teaspoon ground cinnamon
- 1/3 teaspoon salt
- 1/4 cup butter (melted and cooled slightly)
- 1 large egg
- 2 teaspoons pure vanilla extract
- 1 1/4 cups milk
Chocolate Filling
- 1/2 cup chocolate chips (or buttons)
Cinnamon Sugar Coating
- 4 tablespoons sugar
- 1 teaspoon ground cinnamon
Instructions
- Prepare the Batter: Combine the self raising flour, baking powder, sugar, ground cinnamon, and salt together in a large-sized bowl. Create a well in the center, then add the melted butter, egg, vanilla extract, and milk. Slowly whisk the mixture until it forms a smooth batter. Set it aside to rest.
- Cook the Pancakes: Heat a small amount of butter in a nonstick pan over low to medium heat. Pour less than 1/4 cup of batter onto the pan and gently spread with the back of a ladle. Quickly drop chocolate chips onto the center of the batter, then carefully pour a small amount of pancake batter over the top to fully cover the chocolate chips.
- Flip and Finish Cooking: Cook until the underside is golden brown. Gently flip the pancake and cook until the other side is also golden and the chocolate inside is melted. Repeat this process for the remaining batter and chocolate chips. Note that no bubbles will appear on the surface before flipping, so check the edges to determine readiness.
- Coat with Cinnamon Sugar: Mix the sugar and ground cinnamon in a wide, shallow dish. While each pancake is still warm, place it into the cinnamon sugar mixture, coating both sides evenly. Place coated pancakes onto a serving dish.
- Serve: Serve the churro pancakes warm, optionally with fruit, ice cream, or frozen yoghurt, or enjoy them as they are.
Notes
- Use a nonstick pan for best results and easier flipping.
- Ensure the butter is melted and slightly cooled before adding to the batter to avoid cooking the egg.
- The pancakes won’t show bubbles on top like traditional pancakes, so rely on the edges turning golden to know when to flip.
- Customize the chocolate filling with your favorite chocolate chips or buttons for different flavors.
