  • Total Time: 1 hour 10 minutes (including setting time)
  • Yield: 25 servings

Ingredients

Snickers Chocolate Bark

  • 250 g dark chocolate (85% cacao)
  • 6 large medjool dates (120 grams, deseeded and chopped)
  • 1 cup peanuts
  • 2-3 tbsp natural peanut butter
  • Pinch of flaky sea salt

Hazelnut Chocolate Bark

  • 200 g dark chocolate (85% cacao)
  • 1 cup roasted hazelnuts
  • Pinch of flaky sea salt (optional)

Persian Chocolate Bark

  • 200 g dark chocolate (85% cacao)
  • 1-2 tsp rose water
  • ½ cup pistachios
  • ½ pomegranate, seeded
  • 2 tsp melted coconut oil (optional)
  • Edible rose petals for garnish

Instructions

  1. Melt Chocolate (All Flavors): Roughly chop the dark chocolate and melt it using the double boiler method by placing a heat-safe bowl over a pot of simmering water. Stir gently with a spatula until fully melted with no lumps, then remove from heat. Alternatively, melt the chocolate carefully in the microwave.
  2. Snickers Chocolate Bark Preparation: Deseed the medjool dates and chop into small pieces using a knife or scissors. Add the chopped dates and peanuts to the melted chocolate and stir until everything is evenly coated.
  3. Form Snickers Bark: Line a rectangular dish or baking tin with parchment paper. Pour in the chocolate mixture and flatten the surface evenly with a spatula, tapping the dish gently to level the mixture.
  4. Add Peanut Butter and Salt: Using a teaspoon, drop small dollops of natural peanut butter scattered across the chocolate surface. Swirl the peanut butter with a toothpick to create decorative patterns. Sprinkle flaky sea salt over the top.
  5. Set Snickers Bark: Place the dish in the freezer for 1 hour or refrigerate for 2-3 hours until the bark is fully set. Once hardened, remove from the dish and cut into smaller pieces for serving.
  6. Hazelnut Chocolate Bark Preparation: Stir the roasted hazelnuts into the melted chocolate until well combined and evenly coated.
  7. Form Hazelnut Bark: Line a rectangular dish with parchment paper and pour in the hazelnut chocolate mixture. Flatten evenly with a spatula and sprinkle a pinch of flaky sea salt if desired.
  8. Set Hazelnut Bark: Chill in the freezer for 1 hour or the refrigerator for 2-3 hours until set. Cut into pieces once hardened to serve.
  9. Persian Chocolate Bark Preparation: Stir 1 teaspoon of rose water into the melted chocolate, tasting as you go; add a second teaspoon if preferred. Then fold in the pomegranate seeds and pistachios.
  10. Adjust Mixture Consistency: If the mixture thickens too much due to the rose water, stir in melted coconut oil to thin it out to a spreadable consistency.
  11. Form Persian Bark: Line a rectangular dish with parchment paper and pour in the mixture, flattening it evenly with a spatula. Garnish the top with edible rose petals.
  12. Set Persian Bark: Freeze for 1 hour or refrigerate for 2-3 hours until firm. Cut into pieces carefully to serve.

Notes

  • Melting chocolate with a double boiler prevents burning and ensures smooth texture.
  • Freezing sets the bark quickly and helps achieve a firm snap.
  • Use parchment paper-lined dishes for easy removal of chocolate bark.
  • Adjust rose water to taste carefully, as its flavor is potent.
  • The coconut oil is optional but helps in thinning the Persian bark mixture for easier spreading.
  • Store the chocolate bark in an airtight container in the refrigerator to maintain freshness.
