Ingredients
Dry Ingredients
- 1/2 cup chia seeds
- 4 Tbsp raw cacao powder
- 1/2 tsp cinnamon
Wet Ingredients
- 2 cups unsweetened almond milk
- 1/2 tsp vanilla extract
- 1 Tbsp maple syrup
- 2 medium ripe bananas, mashed
Instructions
- Mix dry ingredients: In a large container or bowl, whisk together the chia seeds, raw cacao powder, and cinnamon until well combined.
- Add wet ingredients: Pour in the unsweetened almond milk, vanilla extract, maple syrup, and mashed bananas into the dry mixture. Whisk thoroughly until all ingredients are fully incorporated.
- Refrigerate to thicken: Cover the container or bowl with a lid or plastic wrap and refrigerate for at least 2 hours or overnight. During this time, the chia seeds will absorb liquid and thicken into a pudding-like consistency.
- Blend for smoothness (optional): Once thickened, transfer the pudding to a blender and blend until smooth. This step enhances the creaminess but can be skipped if you prefer a chunkier texture.
- Serve and enjoy: Spoon the pudding into serving dishes, add desired toppings such as fresh fruit or nuts, and enjoy immediately or store in the fridge for later consumption.
Notes
- Chia seeds expand significantly when soaked, so make sure to use enough liquid.
- Use ripe bananas for natural sweetness and creaminess.
- The blending step is optional; blending creates a smoother texture.
- Refrigeration time can be extended overnight for best texture.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Toppings like sliced nuts, berries, or coconut flakes complement the pudding well.
