Ingredients
Burgers:
- 1 lb ground beef
- 2 canned chipotle peppers, finely chopped
- 1 tablespoon adobo sauce
- 2 tablespoons minced yellow onion
- 1 teaspoon garlic powder
- ½ teaspoon ground cumin
- ½ teaspoon smoked paprika
- ¼ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- 4 slices Colby Jack or Pepper Jack cheese
- 4 brioche buns (sesame or onion)

Sauce:
- ¾ cup mayonnaise
- Juice of half a lime
- 2 teaspoons honey
- 2 teaspoons adobo sauce
- 2 garlic cloves, minced
- ½ teaspoon smoked paprika

Instructions
- Prepare the patties: In a large bowl, combine ground beef, finely chopped chipotle peppers, adobo sauce, minced yellow onion, garlic powder, ground cumin, smoked paprika, kosher salt, and ground black pepper. Mix until just combined. Form the mixture into 4 equal patties, pressing an indentation in the center of each with your knuckle to help them cook evenly.
- Cook the patties: Heat a grill pan over medium-high heat. Cook the burger patties for about 3 to 5 minutes per side, or until they reach your desired doneness. The exact time will depend on the patty thickness. Ensure the patties are cooked through.
- Melt the cheese: Place a slice of Colby Jack or Pepper Jack cheese on top of each patty. Transfer the patties to a plate and cover loosely with foil to keep warm and allow the cheese to melt while you prepare the sauce.
- Make the chipotle sauce: In a small bowl, whisk together mayonnaise, lime juice, honey, adobo sauce, minced garlic, smoked paprika, and salt and pepper to taste until smooth and creamy.
- Assemble the burgers: Spread the chipotle mayo sauce on the bottom half of each brioche bun. Add the cooked burger topped with melted cheese, then layer with your preferred toppings such as lettuce and sliced tomato. Top with the other half of the bun and serve immediately.
