A refreshing and nutritious Chickpea Salad featuring marinated chickpeas combined with fresh tomatoes, cucumbers, bell pepper, red onion, and fragrant parsley and mint. Perfect for a quick, healthy meal or side dish that can be served immediately or chilled for enhanced flavors.

  • Total Time: 20 minutes
  • Yield: 4 servings

Ingredients

Chickpea Marinade

  • 2 15-oz cans chickpeas
  • 2 tbsp lemon juice
  • 2 tbsp extra virgin olive oil
  • 1 tsp paprika
  • 1/2 tsp sea or kosher salt

Vegetables and Herbs

  • 2 large tomatoes (diced to 1/2″)
  • 4 Persian cucumbers (diced to 1/2″)
  • 1 yellow bell pepper (diced to 1/2″)
  • 1/2 medium red onion (diced to 1/2″)
  • 1/2 cup minced fresh parsley
  • 1/2 cup minced fresh mint
  • 1/2 tsp pepper

Instructions

  1. Drain and Rinse Chickpeas: Drain the chickpeas from the cans, transfer them to a strainer, and rinse under cool running water until the water runs clear. This removes excess salt and preserves freshness.
  2. Marinate Chickpeas: In a large bowl, combine the rinsed chickpeas with lemon juice, extra virgin olive oil, paprika, and salt. Stir well to coat all chickpeas. Cover the bowl and refrigerate to marinate for at least 15 minutes, or up to an hour to deepen the flavors.
  3. Prepare Vegetables and Herbs: While the chickpeas marinate, dice the tomatoes, Persian cucumbers, yellow bell pepper, and red onion to uniform 1/2-inch pieces. Mince the fresh parsley and mint finely to release their aroma.
  4. Combine Salad Ingredients: Add the diced vegetables and minced herbs to the marinated chickpeas bowl. Toss gently but thoroughly to mix all ingredients evenly. Taste the salad and adjust seasoning by adding more salt, pepper, or lemon juice as needed to enhance the flavor profile.
  5. Serve or Chill: Serve the salad immediately alongside fresh pita bread for a light, satisfying meal. Alternatively, chill the salad in the fridge for up to 30 minutes to allow flavors to meld. Store leftovers in a sealed container in the refrigerator for up to 3 days.

Notes

  • For best taste, use fresh, ripe tomatoes and crisp Persian cucumbers.
  • If you prefer a spicier salad, add a pinch of cayenne pepper or chili flakes.
  • This salad is excellent as a quick lunch or a side dish for grilled meats or roasted vegetables.
  • To make it vegan and gluten-free, ensure pita bread served alongside complies with dietary needs or replace with gluten-free options.
