Ingredients
Chickpea Salad
- 2 15-ounce cans chickpeas, drained and rinsed
- ⅓ cup vegan mayonnaise or Greek yogurt
- 2 tablespoons lemon juice
- 1 teaspoon Dijon mustard
- 2 celery stalks, finely diced
- ¼ cup red onion, finely diced
- 2 tablespoons fresh dill, chopped
- 2 tablespoons parsley, chopped
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
Sandwich Assembly
- 8 slices sandwich bread
- Lettuce leaves
- Tomato slices
- Sprouts or cucumber slices (optional)
Instructions
- Mash the Chickpeas: Add the drained and rinsed chickpeas to a large bowl and use a fork or potato masher to mash them, leaving some texture for a chunky consistency.
- Mix the Dressing: Stir in the vegan mayonnaise or Greek yogurt, lemon juice, Dijon mustard, garlic powder, salt, and black pepper with the mashed chickpeas until well combined.
- Add Vegetables and Herbs: Fold in the finely diced celery, red onion, chopped dill, and parsley, mixing until the ingredients are evenly distributed throughout the chickpea mixture.
- Adjust Seasoning: Taste the chickpea salad and add more lemon juice or seasoning if desired to suit your preference.
- Toast the Bread: Optionally toast the sandwich bread slices to your liking to add crunch and warmth.
- Assemble the Sandwiches: On four slices of bread, layer lettuce leaves and tomato slices. Spoon the chickpea salad over the vegetables, then top with optional sprouts or cucumber slices.
- Complete and Serve: Place the remaining bread slices on top to close each sandwich and serve immediately for the freshest taste.
