Ingredients

For the Chicken Marinade

  • 2 cups cherry tomatoes, halved

For the Tahini Dressing

  • 1/2 cup tahini
  • 1/4 – 1/2 cup water
  • 1/4 cup olive oil
  • 1 lemon, juiced
  • Sea salt, to taste
  • Cracked black pepper, to taste

Instructions

  1. Marinate the Chicken: In a small bowl, whisk together lemon juice, avocado oil, garlic, kosher salt, cracked black pepper, cumin, paprika, turmeric, and red pepper flakes. Place the raw chicken thighs in a large gallon-sized zipper bag and pour the marinade over the chicken. Massage the marinade into the chicken thoroughly, then press out excess air, seal the bag, and refrigerate for at least a few hours or overnight to allow the flavors to penetrate.
  2. Preheat the Oven: When ready to cook, preheat your oven to 425°F (220°C) to prepare for roasting the chicken.
  3. Roast the Chicken: Remove the chicken from the marinade and arrange it evenly on a rimmed baking sheet. Pour any remaining marinade over the chicken.   5. Make the Tahini Dressing: In a blender, combine tahini, olive oil, lemon juice, sea salt, cracked black pepper, and 1/4 cup of water to start. Blend until the dressing emulsifies and becomes creamy. Add more water as needed to thin the dressing to your preferred consistency, usually closer to 1/2 cup for a salad dressing texture.
  6. Assemble the Salad: Layer the halved tomatoes, sliced cucumbers, and red onions over the herb and lettuce mixture. Top the salad with the sliced roasted chicken. Drizzle the creamy tahini dressing over the top to taste and serve immediately for a fresh, flavorful meal.
