Ingredients
Salad Ingredients
- 1 lb shredded chicken (about 3 cups)
- 1/2 bulb fennel (about 1 cup), thinly sliced
- 1 crisp apple, thinly sliced or julienned
- 1 cup red grapes, halved
- 1/2 cup pecans, toasted
- 1/4 cup chopped parsley
- 4 cups baby greens (optional)
Dressing Ingredients
- 1/2 cup Greek yogurt
- 2 tablespoons cider vinegar
- 2 teaspoons whole grain mustard
- 1/2 teaspoon sea or kosher salt
- 1/2 teaspoon cracked black pepper
Instructions
- Prepare Ingredients: Gather all the ingredients. Thinly slice the fennel bulb, julienne or thinly slice the apple, halve the red grapes, and toast the pecans for added crunch and flavor.
- Combine Salad Components: In a large bowl, mix together the shredded chicken, sliced fennel, apple, halved grapes, toasted pecans, and chopped parsley until evenly distributed.
- Make the Dressing: In a separate bowl, whisk together the Greek yogurt, cider vinegar, whole grain mustard, salt, and cracked black pepper until the dressing is smooth and well combined.
- Toss the Salad: Pour the prepared dressing over the chicken mixture and toss thoroughly to ensure every ingredient is coated with the tangy yogurt dressing.
- Serve and Store: Serve the salad over 1 cup of baby greens or use lettuce leaves as wraps. Store any leftovers in a tightly sealed container in the refrigerator for up to 3 days.
Notes
- To save time, use pre-cooked rotisserie chicken shredded at home or store-bought shredded chicken.
- For extra crunch, toast the pecans in a dry skillet over medium heat for 3-5 minutes, stirring frequently, until fragrant.
- This salad can be served chilled or at room temperature depending on preference.
- Mix up the nuts by substituting walnuts or almonds if desired.
- Use a crisp, tart apple variety such as Granny Smith for a nice balance of sweetness and acidity.
- For a dairy-free version, substitute the Greek yogurt with a plant-based yogurt alternative.
