Ingredients
Main Ingredients
- 1 tablespoon extra virgin olive oil
- 1 5.3 ounce Boursin Garlic and Herb cheese
- 12 ounces orzo pasta (about 1 2/3 cup)
- 3 cups vegetable or chicken broth
- 2 cups fresh broccoli florets
- 2 cups rotisserie chicken (shredded into bite-size pieces)
- 1 cup fresh spinach leaves (torn)
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- 2 tablespoons fresh parsley (roughly chopped)
Instructions
- Preheat and prepare baking dish: Preheat your oven to 400℉ (200℃). Lightly coat a 9×13 inch baking dish with the olive oil to prevent sticking and add flavor.
- Combine ingredients: Place the Boursin Garlic and Herb cheese in the center of the baking dish. Add the orzo pasta, broth, fresh broccoli florets, shredded rotisserie chicken, and torn spinach leaves around the cheese. Season everything with kosher salt and black pepper evenly.
- Bake covered: Cover the baking dish with foil and bake in the preheated oven for 25 to 30 minutes. This step allows the orzo to absorb the liquid and cook through evenly.
- Finish baking uncovered: Remove the foil, stir the mixture gently to incorporate the melting cheese and evenly distribute ingredients. Return to oven and bake uncovered for an additional 5 to 7 minutes until the orzo is fully cooked and slightly browned.
- Final stir and garnish: Give the dish one last stir to fully combine all ingredients and adjust seasoning with extra salt and pepper if needed. Sprinkle the fresh chopped parsley on top before serving for a bright, fresh finish.
Notes
- You can substitute rotisserie chicken with cooked chicken breast or thighs if preferred.
- Use chicken broth for a richer flavor or vegetable broth to keep it lighter.
- Ensure the orzo is fully covered by liquid to avoid dryness during baking.
- Leftovers can be refrigerated and gently reheated; add a splash of broth when reheating to maintain creaminess.
