This comforting Chicken Cobbler recipe combines tender shredded chicken, savory vegetables, and a creamy sauce topped with fluffy cheddar biscuits. Baked to golden perfection, it’s an easy, hearty dish perfect for family dinners or meal prep.

  • Total Time: 1 hour 10 minutes
  • Yield: 8 servings

Ingredients

Base Layer

  • ½ cup salted butter (melted)
  • 4 lbs shredded chicken breast (pre-cooked or use 2 rotisserie chickens)
  • 12 ounces frozen peas and carrots

Sauce

  • 1½ cups chicken broth
  • 1 (10.5 oz) can cream of chicken soup

Biscuit Topping

  • 2 cups whole milk
  • 1 (11.36 oz) box Red Lobster Cheddar Biscuits mix (dry)
  • 1 cup shredded cheddar cheese (optional)
  • 1 tablespoon Old Bay seasoning (or seasoning of choice) (optional)

Instructions

  1. Preheat oven: Preheat your oven to 350°F (177°C) to prepare for baking your cobbler.
  2. Prepare baking dish: Pour the melted butter into the bottom of a 9×13-inch baking pan, then place this pan on a larger rimmed baking sheet to catch any overflow during baking.
  3. Add chicken layer: Spread the shredded chicken evenly across the buttered bottom of the pan, forming a uniform layer.
  4. Add vegetables: Spread the frozen peas and carrots evenly over the chicken layer.
  5. Pour sauce: In a medium bowl, whisk together the cream of chicken soup and chicken broth until smooth. Pour this mixture evenly over the chicken and vegetable layers in the pan, but do not stir or mix.
  6. Prepare biscuit topping: Whisk together the whole milk, biscuit mix, and seasoning included in the biscuit mix box. If using, add the shredded cheddar cheese and 1 tablespoon Old Bay seasoning. Pour this biscuit batter gently over the soup layer, again without mixing.
  7. Bake: Bake the assembled dish in the preheated oven for 50 to 60 minutes, until the biscuit topping is golden brown and cooked through.

Notes

  • You can substitute the frozen peas and carrots with other vegetables like corn or green beans if preferred.
  • Using pre-cooked rotisserie chicken helps speed up preparation.
  • For a spicier flavor, increase the Old Bay seasoning or add a dash of cayenne pepper to the biscuit batter.
  • Serve the cobbler warm, ideally with a fresh green salad or steamed vegetables.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven to maintain crispness.
