Instructions
- Preheat Oven: Preheat your oven to 350°F (180°C) to prepare for baking the dip evenly and to ensure it cooks thoroughly.
- Combine Ingredients: In a medium bowl, mix together the softened cream cheese, mayonnaise, and cornstarch until smooth. Then add the grated Chihuahua and Monterey Jack cheeses, chopped cooked chicken, canned chopped green chiles, and the light parts of the green onions. Stir thoroughly until all ingredients are well combined.
- Bake the Dip: Pour the combined chicken and cheese mixture into an 8×11 inch baking dish, spreading it out in an even layer. Place the dish into the preheated oven and bake for 20 minutes to let the dip heat through and the flavors meld.
- Broil to Finish: After baking, switch your oven to the broil setting. Carefully move the baking dish to the second rack from the top, away from the direct broiler flame. Broil for about 1 minute or until the top is lightly golden in spots, creating a slightly browned, bubbly texture.
- Serve: Remove the dip from the oven and allow it to cool slightly to prevent burning when eating. Sprinkle chopped fresh cilantro and the dark green parts of the sliced green onions on top as garnish. Serve warm with thick sturdy tortilla chips for dipping.
