Instructions
- Combine condensed milk and butter: In a Dutch oven or non-stick saucepan, mix the sweetened condensed milk and unsalted butter. Cook over medium-low heat until the butter has fully melted, creating a smooth base for the brigadeiro.
- Melt white chocolate and thicken mixture: Add white chocolate chips to the pan and stir constantly with a rubber spatula. Continue cooking until the chocolate has melted completely and the mixture thickens significantly. The proper consistency is when a clear path is left on the surface after running the spatula, and it takes a moment for the mixture to flow back.
- Add champagne and heavy cream: Stir in the sparkling wine and heavy cream, then keep cooking and stirring until the mixture thickens again to the brigadeiro consistency.
- Cool and refrigerate: Remove the mixture from the heat and pour it onto a greased plate to cool to room temperature. Cover with plastic wrap and refrigerate for 4 hours to set firmly.
- Shape brigadeiros: Once chilled, scoop tablespoons of the mixture and roll each into smooth balls with your hands.
- Coat with sprinkles: Roll each brigadeiro ball in colorful sprinkles and place them in candy cups for serving.
- Serve or store: Enjoy the brigadeiros immediately, or store them at room temperature in an airtight container for up to 3 days.
