Ingredients
Salad
- 1 large bunch celery
- 2 medium apples (honeycrisp recommended)
- 1/2 cup Gruyere cheese, shaved
- Salt, to taste
- Pepper, to taste
Lemon Vinaigrette Dressing
- 1/4 cup olive oil
- 1 lemon, juice only
- 1 Tbsp white wine vinegar
- 1 tsp maple syrup
- 1/2 tsp dijon mustard
- 1/2 tsp garlic powder
- Salt, to taste
- Pepper, to taste
Instructions
- Make the lemon vinaigrette: Add olive oil, lemon juice, white wine vinegar, maple syrup, dijon mustard, garlic powder, salt, and pepper to a small bowl or jar with a lid. Whisk or shake vigorously to combine. Set aside.
- Prepare the celery: Trim off any brown or damaged ends from the celery stalks. Chop the celery into thin, bite-sized pieces. If the celery leaves are fresh and appealing, chop them as well for garnish to minimize waste.
- Shave the Gruyere cheese: Using a vegetable peeler, shave thin slices off a block of Gruyere cheese to add delicate, flavorful pieces to the salad.
- Prep the apples: Core the apples and thinly slice them. Then cut the slices into bite-sized pieces that match the celery size for a harmonious texture in the salad.
- Combine ingredients: In a large salad bowl, add the chopped celery, apple pieces, shaved Gruyere, and celery leaves. Whisk the dressing one more time and pour over the salad. Season with salt and pepper to taste, then toss everything gently to combine evenly.
- Serve immediately: For the best texture and flavor, serve this salad right after tossing so the celery remains crisp and the apples stay fresh.
Notes
- Use honeycrisp or any crisp, sweet apple variety for the best balance of tartness and sweetness.
- Fresh celery leaves add a lovely garnish and flavor while reducing waste.
- This salad is best eaten immediately to keep the celery crisp and apples from browning.
- Gruyere can be substituted with a similarly textured cheese like Emmental or Jarlsberg if desired.
- Adjust the lemon vinaigrette seasoning to your taste preference by adding more maple syrup or mustard.
