Cauliflower Crust
- 1 small to medium sized head of cauliflower (should make 2 cups once processed)
- ½ teaspoon dried basil
- ¼ teaspoon dried oregano
- 1 teaspoon garlic salt OR ¼ teaspoon salt and ¼ teaspoon garlic powder
- ⅓ cup shredded parmesan cheese
- ⅓ cup shredded mozzarella cheese
- 1 egg

Instructions
- Preheat Oven: Set your oven to 450°F (232°C) to prepare for baking the crust.
- Prepare Baking Surface: Place parchment paper on a cookie sheet and spray with non-stick butter spray or use a silicon baking mat.
- Rice the Cauliflower: Remove florets from the cauliflower head, discarding stems. Pulse the florets in a food processor until finely grain-like but not pureed.
- Microwave Cauliflower: Transfer riced cauliflower to a microwave-safe bowl and microwave for about 4 minutes to soften.
- Drain Excess Moisture: Place the cooked cauliflower in a kitchen towel or paper towels and wring out as much liquid as possible for a dry crust.
- Mix Ingredients: In a bowl, combine the dried cauliflower with dried basil, oregano, garlic salt or powder, parmesan cheese, mozzarella cheese, and egg until well incorporated.
- Form the Dough Ball: Use your hands to form the mixture into a ball shape.
- Shape the Crust: Place the ball on the parchment paper and flatten it into a pizza shape, ensuring it is neither too thick nor too thin.
- Bake Crust: Bake in the preheated oven for about 15 minutes until the edges are golden brown and the middle is set. Flip the crust and bake for a few more minutes.
- Cool Crust: Remove from oven and allow the crust to cool for a few minutes before adding toppings.
- Add Sauce and Toppings: Spread your favorite pizza sauce and toppings evenly over the crust.
- Final Bake: Bake at 350°F (177°C) for 3-5 minutes or until the cheese on top melts and starts to brown.
- Optional Tip: Using a pizza stone can help to achieve a crispier crust, though it is not essential.

- Be sure to wring out as much water as possible from the cauliflower to avoid a soggy crust.
- You can use frozen riced cauliflower to save time; just thaw and drain well before use.
