Ingredients
Fritters
- 500 g / 17.6 oz (1 small cauliflower)
- 100 g / 3.5 oz chickpea flour
- 150 ml / 10 tbsp soy milk (or other plant milk)
- 1 tsp smoked paprika
- 1 tsp cumin
- ¼ tsp garlic powder
- ½ cup nutritional yeast
- 3 spring onions, sliced finely
- 1 tsp salt
- Oil, for frying
Coriander Yogurt Dip
- 240 g / 1 cup vegan yogurt
- About 10 g / 0.35 oz coriander / cilantro (a small handful)
- Squeeze of lime or lemon
- Salt & pepper, to taste
Instructions
- Prepare Cauliflower: Divide the cauliflower into florets and simmer them in boiling water for about 5 minutes until just tender. This ensures the cauliflower is cooked but still holds its shape for the fritters.
- Chop Cauliflower: Drain the cauliflower well, then chop it finely either by hand or pulse briefly in a food processor, being careful not to over-process to avoid a mushy texture.
- Make Batter: In a mixing bowl, whisk together the chickpea flour and plant milk until smooth. Add smoked paprika, cumin, garlic powder, nutritional yeast, and salt. Stir in the sliced spring onions and finely chopped cauliflower to combine everything evenly.
- Fry Fritters: Heat a medium-sized pan over medium heat and add enough oil to cover the bottom. Spoon about 2 tablespoons of the mixture per fritter into the pan, spacing them apart to avoid overcrowding. Fry undisturbed for 3-4 minutes until the bottom is golden brown, then carefully flip and fry the other side until golden and cooked through.
- Keep Warm: Transfer the cooked fritters to a warm oven to keep them hot while you finish frying the rest of the batter.
- Prepare Dip: Place the vegan yogurt and coriander in a blender and blend until smooth. Taste and season with a squeeze of lime or lemon juice, salt, and pepper as desired.
- Serve: Serve the crispy cauliflower fritters immediately with the fresh coriander yogurt dip on the side for dipping.
Notes
- Be careful not to overprocess the cauliflower in the food processor to maintain a good texture in the fritters.
- You can substitute soy milk with other plant-based milks like almond or oat milk.
- Adjust the amount of spices according to your preference for heat and flavor.
- For a gluten-free version, ensure the nutritional yeast and all other ingredients are certified gluten-free.
- These fritters are best enjoyed fresh but can be reheated in a skillet to maintain crispiness.
