Ingredients
Orange Peels
- 3 organic oranges
- 2 cups water
- 1 cup sugar
- 1 vanilla bean (optional)
For Coating and Decoration
- Additional granulated sugar, for coating
- Chocolate (dark, milk, or white, optional) for dipping
Instructions
- Wash Oranges: Gently wash the outside of the oranges using a vegetable brush under cold running water to clean thoroughly.
- Prepare Peels: Slice off a small piece from the top and bottom of each orange. Score through the peel to the pith making four lengthwise cuts without cutting into the fruit, then carefully peel off each section.
- Trim and Slice: Slice the peeled orange sections into 1/4-inch-wide strips to prepare for candying.
- Boil Peels Twice: Place the strips in a pot, cover with about an inch of water, bring to a boil, then drain through a colander. Repeat this boiling and draining process one more time to reduce bitterness.
- Simmer in Sugar Syrup: Add the orange peels back to the pot with 2 cups of water, 1 cup sugar, and the vanilla bean if using. Bring to a boil, then lower to a simmer and cook uncovered for 30-35 minutes until peels are translucent and syrup has mostly evaporated.
- Cool in Syrup: Turn off the heat and let the peels cool in the remaining sugar syrup for 5 minutes to absorb extra sweetness.
- Dry the Peels: Using tongs, transfer the peels to a drying rack over parchment paper. Allow them to dry for at least 8 hours, ideally 24 hours, until tacky but no longer wet.
- Coat and Dip: Toss the dried peels in additional granulated sugar for a sparkly finish. Optionally, dip the peels in melted chocolate, then cool and set on parchment until firm.
- Store and Serve: Enjoy immediately or store in an airtight container in the refrigerator. These keep well and make delightful gifts or garnishes.
