Ravioli
- 2 packages Butternut Squash Ravioli (18 oz total)
Sauce
- 1 stick unsalted butter (8 tablespoons)

Instructions
- Cook the ravioli: Bring a large pot of salted water to a boil and cook the butternut squash ravioli according to the package instructions, usually about 3-5 minutes until they float to the surface. Before draining, reserve 1/2 cup of the pasta cooking water to help create the sauce.
- Brown the butter: In a large skillet over medium heat, melt 1 stick (8 tablespoons) of unsalted butter. Continue cooking the butter until it starts to foam and turns golden brown with a nutty aroma; this should take about 3-4 minutes. Be careful not to burn it.
- Fry the sage leaves: Add 20 fresh sage leaves to the browned butter in the skillet and fry them for 3-4 minutes until they become crispy. Remove the sage leaves using a slotted spoon and set aside on paper towels to drain.
- Combine ravioli and sauce: Add the cooked ravioli to the skillet along with the reserved 1/2 cup pasta water, 1/2 teaspoon salt, 1/2 teaspoon black pepper, and 2 tablespoons heavy whipping cream. Gently stir to coat the ravioli evenly and allow the sauce to thicken slightly.
- Add cheese and sage: Sprinkle 1/2 cup grated parmesan cheese and the crispy fried sage leaves back into the pan. Stir everything together to combine, ensuring the cheese melts into the sauce. Serve immediately and enjoy a perfectly sauced butternut squash ravioli dish.
