This creamy, spicy Buffalo Chicken Dip is a perfect crowd-pleaser appetizer, combining shredded chicken with tangy buffalo sauce, melted cheese, and a hint of blue cheese crumbles. Baked to bubbly perfection and served warm with fresh celery, carrot sticks, and optional crackers or chips, it’s ideal for game days, parties, or casual gatherings.

  • Total Time: 40 minutes
  • Yield: 8 servings

Ingredients

Main Ingredients

  • 2 tablespoons salted butter
  • 2 cups shredded chicken
  • ¾ cup buffalo sauce (such as Frank’s RedHot®)
  • 8 ounces cream cheese, softened
  • ¾ cup sour cream
  • 1½ cups shredded mild cheddar cheese
  • 1 cup shredded low-moisture mozzarella cheese
  • 4 ounces crumbled blue cheese
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • ¾ teaspoon onion powder
  • 6 green onions, chopped

For Serving

  • Celery sticks
  • Carrot sticks
  • Chicken-flavored crackers (optional)
  • Corn tortilla chips (optional)

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) and position a rack in the center. This ensures even baking for a perfectly bubbly dip.
  2. Melt butter and warm chicken: In a 12-inch cast-iron or ovenproof skillet, melt the 2 tablespoons of salted butter over medium heat. Add the shredded chicken and buffalo sauce, cooking together until warmed through, about 3 minutes. Remove the skillet from heat.
  3. Mix in creamy ingredients: Stir in the softened cream cheese and sour cream along with 1 cup shredded mild cheddar, half the shredded mozzarella, half the crumbled blue cheese, Worcestershire sauce, garlic powder, onion powder, and ¾ of the chopped green onions. Mix until all ingredients are well combined.
  4. Add remaining cheese and bake: Sprinkle the remaining cheddar and mozzarella cheeses evenly over the top of the mixture. Transfer the skillet to the preheated oven and bake for about 25 minutes or until the dip is hot and bubbly.
  5. Garnish and serve: After baking, sprinkle the remaining chopped green onions and crumbled blue cheese over the dip. Serve warm with celery sticks, carrot sticks, and your choice of chicken-flavored crackers or corn tortilla chips for dipping.

Notes

  • You can use pre-cooked rotisserie chicken to save time on shredding and cooking the chicken.
  • Adjust the amount of buffalo sauce based on your preferred spice level.
  • The dip can be prepared ahead of time up to step 3, then refrigerated. When ready to serve, add the remaining cheese and bake as directed.
  • For a milder version, reduce or omit the blue cheese.
  • If you don’t have a cast-iron skillet, any oven-safe baking dish will work.
