These Brie Cranberry Bites are delightful mini appetizers featuring creamy brie cheese paired with a tangy cranberry-orange mixture, nestled in flaky crescent roll dough and topped with crunchy pecans. Perfect for holiday gatherings or any occasion that calls for an elegant yet easy-to-make finger food.

  • Total Time: 27 minutes
  • Yield: 24 bites (serves 8)

Ingredients

Dough

  • 1 Can crescent roll dough

Fillings

  • 6 Ounces brie cheese (about ¾ Cup), sliced into 1-inch squares
  • ¼ Cup whole cranberry sauce
  • ¼ Cup orange marmalade
  • ¼ Cup pecans, chopped

Other

  • Nonstick cooking spray (for greasing mini muffin pan)
  • Fresh rosemary sprig (optional garnish)

Instructions

  1. Preheat and prepare pan: Preheat your oven to 375 degrees F (190 degrees C). Generously spray a mini muffin pan with nonstick cooking spray to prevent sticking.
  2. Mix cranberry filling: In a bowl, combine the whole cranberry sauce and orange marmalade, stirring until well blended. Set this mixture aside for later use.
  3. Slice brie cheese: Using a sharp knife, carefully cut the brie cheese into small 1-inch squares. You can keep the rind on for extra flavor and texture. Set the slices aside.
  4. Prepare crescent dough: Roll out the crescent roll dough on a lightly floured surface to prevent sticking.
  5. Seal dough perforations: Press the perforated seams of the dough with your fingers to form one large rectangle without separating lines.
  6. Cut dough squares: Using a sharp knife, cut the large rectangle into 24 equally sized squares. Gently press each square into the cups of the prepared mini muffin pan, shaping little dough cups.
  7. Assemble the bites: Place one cube of brie cheese into each dough cup. Spoon about 1 tablespoon of the cranberry-orange mixture over the brie, then sprinkle a pinch of chopped pecans on top of each.
  8. Bake: Place the mini muffin pan in the preheated oven and bake for 10 to 12 minutes, or until the crescent dough is golden brown and cooked through.
  9. Cool: Remove the pan from the oven and allow the bites to cool in the pan for about 10 minutes to set before removing them.
  10. Garnish and serve: Optionally, place a small sprig of fresh rosemary atop each bite for an aromatic and festive touch. Serve warm or at room temperature.

Notes

  • Keep the rind on the brie for added texture and flavor, but feel free to remove if preferred.
  • If you don’t have a mini muffin pan, you can try making slightly larger bites with a regular muffin pan, adjusting baking time accordingly.
  • These can be prepared ahead of time by assembling but baking just before serving for best freshness.
  • For a nut-free option, omit pecans or substitute with seeds like pumpkin or sunflower.
  • Fresh rosemary is optional but adds a lovely herbal aroma to the final presentation.
