Chicken and Seasoning
- 1½ pounds boneless, skinless chicken breasts
- 1/4 cup all purpose flour or arrowroot powder
- Kosher salt, to taste
- Black pepper, to taste
- 1½ tablespoons avocado or olive oil
Sauce
- 5 oz Boursin cheese package (Garlic and Herb recommended)
- 2 small shallots, chopped small (about 1/4 cup)
- 1 cup vegetable broth
- Chopped parsley, for garnish
Instructions
- Prepare Chicken: If using large chicken breasts, pound them to an even thickness of about 1/2 inch by placing between sheets of parchment paper and using a mallet on both sides. Season both sides of the chicken breasts with kosher salt and black pepper, then coat evenly with flour, shaking off any excess.
- Sear Chicken: Heat a large pan over medium-high heat and add the avocado or olive oil. Once hot, add the chicken breasts and sear on one side for about 4 minutes until golden brown. Flip and cook another 4 minutes or until internal temperature reaches 165°F. Remove chicken from the pan and set aside on a plate.
- Make Sauce Base: In the same pan with the drippings, add the chopped shallots and sauté for about 1 minute until softened. Pour in the vegetable broth, scraping the browned bits from the pan to deglaze. Bring the broth to a simmer and reduce by approximately 1/4 cup, about 3–4 minutes.
- Add Boursin Cheese: Lower the heat and stir in the Boursin cheese until melted and smooth. Increase the heat slightly to maintain a low simmer with small bubbles.
- Combine and Finish: Return the chicken breasts to the pan, coating them with the cheese sauce. Cook an additional 2–3 minutes until the sauce has thickened and chicken is heated through. Garnish with chopped parsley and serve immediately.

- Use a meat mallet to ensure even cooking for thicker chicken breasts.
- Arrowroot powder can be used for a gluten-free flour alternative.
