Ingredients
White Wine Simple Syrup
- 1 cup white wine (sauvignon blanc recommended)
- 1/4 cup sugar
Blueberry Lemon Mixture
- 2 cups fresh blueberries
- Zest of 1 large lemon
- 1 cup freshly squeezed lemon juice
Spritzer
- 24 ounces sparkling water (such as Topo Chico), or more as needed
- Ice, for serving
- Fresh mint sprigs and lemon wheels, for garnish (optional)
Instructions
- Make the White Wine Simple Syrup: In a saucepan over medium heat, combine 1 cup white wine and 1/4 cup sugar. Stir continuously until the sugar dissolves completely. Remove from heat and allow the syrup to cool. Once cooled, transfer it to a jar or container with a tight-fitting lid and refrigerate until ready to use.
- Prepare the Blueberry Lemon Mixture: In another saucepan, add 2 cups fresh blueberries and the zest of one large lemon. Pour in 1 cup of freshly squeezed lemon juice. Bring the mixture to a low boil over medium to medium-high heat, stirring occasionally, for about 6 to 8 minutes until the berries soften and burst.
- Cool the Mixture: Remove the saucepan from the heat. To cool quickly, set the pan inside a large bowl filled about one-third to one-half with ice and cold water. Once cool, remove and discard the lemon rinds.
- Puree the Mixture: Transfer the cooled blueberry lemon mixture to a blender and puree until smooth. Ensure the liquid is cool before blending to prevent damage or splattering.
- Strain the Puree: Place a mesh strainer over a large liquid measuring cup and strain the pureed mixture to remove seeds and pulp. Pour the strained liquid into a pitcher.
- Combine with White Wine Syrup: Add all of the white wine simple syrup to the pitcher and stir well to combine the flavors.
- Assemble the Spritzer: Fill glasses with ice. Pour the blueberry wine mixture halfway up the glass, then top off with sparkling water. Adjust quantity of sparkling water to taste.
- Garnish and Serve: Optionally garnish each glass with fresh mint sprigs and lemon wheels for an extra touch of color and aroma. Serve immediately and enjoy your refreshing spritzer.
Notes
- The white wine simple syrup can be made in advance and stored in the refrigerator for up to one week.
- Adjust the amount of sparkling water based on how strong or light you prefer your spritzer.
- For a non-alcoholic version, substitute the white wine with grape juice and omit the syrup step or use a sugar simple syrup instead.
- Make sure to puree the mixture only when it’s completely cooled to avoid blender damage and to prevent raw fruit flavors.
- Use fresh blueberries for the best flavor; frozen can be used but will alter texture slightly.
