Dressing Ingredients
- 1 cup cottage cheese (low fat preferred)
- ¼ cup milk (low fat)
- 2½ teaspoons lemon juice (or 2 teaspoons apple cider vinegar)
- 1 teaspoon dried dill weed
- ½ teaspoon dried parsley
- 1 teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon kosher salt (or to taste)
- Ground black pepper (to taste)
Instructions
- Blend Cottage Cheese and Milk: Using a small blender or an immersion blender inside a mason jar, blend the cottage cheese and milk until the mixture is smooth and creamy with no lumps.
- Add Seasonings: Add the lemon juice (or apple cider vinegar), dried dill weed, dried parsley, garlic powder, onion powder, kosher salt, and ground black pepper to the blender.
- Blend Again: Blend all the ingredients together again until the seasoning is fully incorporated and the dressing is smooth.
- Adjust Seasonings to Taste: Taste the dressing and add more salt and pepper if needed to suit your preference.
- Store Properly: Transfer the dressing to an airtight container and refrigerate. It will keep fresh for up to one week.
Notes
- For a thinner dressing, add additional milk a tablespoon at a time until the desired consistency is reached.
- Use low-fat or full-fat cottage cheese depending on your calorie preference.
- This dressing can be used as a dip for vegetables or a spread on sandwiches besides salad dressing.
