Ingredients

Burger Sauce

  • 1 large shallot, thick sliced rings (1/4 inch)
  • Avocado oil (1-2 teaspoons, as needed)
  • 6 cups iceberg lettuce or romaine, torn
  • 1 cup shredded American cheese
  • Cherry tomatoes, as desired
  • Fresh dill pickles, as desired

Instructions

  1. Make the burger sauce: Stir together mayonnaise, finely chopped dill pickles, ketchup, yellow mustard, distilled white vinegar, paprika, garlic powder, and dried shallots until smooth. Taste and adjust seasonings as needed. Refrigerate until ready to use.
  2. Heat the pan: Preheat a cast iron pan over high heat for 2-3 minutes until very hot. If using lean beef, add 1-2 teaspoons of avocado oil to the pan.
  3. Cook the ground beef: Place the ground beef into the hot pan and use a spatula to smash it down as thin as possible to get a nice sear. Season with kosher salt, black pepper, garlic powder, and smoked paprika. Let cook undisturbed for 4-5 minutes until a crust forms.
  4. Flip and finish cooking: Flip the beef and cook for another 1-2 minutes. Then break the beef into bite-sized pieces and remove from the pan. Set aside.
  5. Cook the shallots: Lower the heat to medium-low and add the thick sliced shallot rings to the pan, using the beef juices to cook them. Stir occasionally and cook until softened, about 4-5 minutes.
  6. Assemble the burger bowls: In large, flat bowls, layer torn lettuce leaves, cooked ground beef pieces, sautéed shallots, shredded American cheese, cherry tomatoes, and fresh dill pickles. Drizzle the prepared burger sauce on top and serve immediately.
