Instructions

- Stir the dry ingredients: In a large mixing bowl, combine almond flour, tapioca flour, coconut flour, baking soda, cinnamon, and kosher salt. Whisk these together until evenly mixed.
- Remove liquid from grated zucchini: Using a nut milk bag or a clean kitchen towel, squeeze the grated zucchini very firmly to remove as much excess water as possible. This step is crucial to prevent soggy bread.
- Mix the wet ingredients: In a separate bowl, whisk together the eggs, applesauce, maple syrup, and apple cider vinegar. Then stir in the well-drained grated zucchini until fully incorporated.
- Combine wet and dry ingredients: Pour the wet mixture into the dry ingredients bowl. Stir gently but thoroughly until the batter is evenly mixed with no dry flour pockets.
- Prepare and pour batter: Grease an 8.5 x 4.5-inch loaf pan to prevent sticking. Pour the batter into the pan, smoothing the top evenly.
- Bake: Place the loaf pan in the preheated oven and bake for 50 to 60 minutes. Test doneness by inserting a toothpick into the center; it should come out clean when the bread is fully baked.

- Make sure to squeeze out as much liquid as possible from the zucchini to avoid a soggy texture in the bread.
