Ingredients
Brioche French Toast
- 8-9 slices brioche bread (3/4″ to 1″ thick)
- 5 large eggs
- 1/2 cup heavy cream
- 1/2 cup whole milk
- 1/4 tsp kosher salt
- 2 tsp vanilla extract
- 1 tsp ground cinnamon
- 1 1/2 Tbsp pure maple syrup
- 3-4 Tbsp unsalted butter
Instructions
- Mix the custard base: In a large bowl, whisk together the eggs, heavy cream, whole milk, kosher salt, vanilla extract, ground cinnamon, and pure maple syrup until fully blended. For ease, transfer to a shallow dish to soak the bread.
- Heat the skillet and melt butter: Place a large skillet over medium heat and melt about 2 tablespoons of unsalted butter. Be ready to lower the heat if the toast browns too quickly during cooking.
- Soak the brioche slices: Dip 2-4 slices of brioche bread at a time into the egg mixture. Let each side soak for about 20 seconds so the bread feels heavy and moist but not overly saturated. Allow excess custard to drip back into the bowl.
- Cook the French toast: Once the butter is melted and foaming, add the soaked brioche slices to the skillet, ensuring they don’t touch. Cook for 3-4 minutes per side until golden brown and crisp. The first batch may take about 4 minutes per side; subsequent batches should cook faster as the pan heats up.
- Repeat and add more butter: Transfer cooked slices to a serving plate and repeat with the remaining bread, adding more butter to the pan as needed to prevent sticking and promote browning.
- Serve and garnish: Serve warm with extra maple syrup and optional toppings such as fresh berries, whipped cream, or a dusting of powdered sugar.
Notes
- Use brioche bread for best results due to its rich, buttery texture and ability to soak up custard without falling apart.
- Allowing the bread to soak just right is key: it should feel like a wet sponge but not dripping, to avoid soggy toast.
- Adjust cooking heat as needed to avoid burning or undercooking.
- Fresh toppings like berries or whipped cream complement the sweetness of the French toast beautifully.
- For a dairy-free version, substitute milk and cream with plant-based alternatives.
